There is a lot to love about this gluten free recipe for Flourless Butterless Almond Butter Chocolate Chip Cookies, starting with the fact that you only need five ingredients and one bowl!

Telling food stories, one kitchen at a time
This blog is very food- and recipe-focused. I don’t mention my credentials often. I don’t educate all that much. What I aim to do as a blogging dietitian is to cook and eat by example. I make delicious and beautiful meals. Mostly healthy meals. Always meals that nourish and satisfy. I also occasionally indulge and that’s reflected on my blog too. You’ll see desserts and outrageous sandwiches and cream sauce-this or cheesy-that. This is right in line with my Kitchen Philosophy — healthy meals are non-negotiable, but everything in moderation.
That being said, I’m proud to be a dietitian and there are so many of us out here who enjoy sharing our recipes, our stories, our ideas, our advice, our knowledge, and everything in between. I’ve gotten to know some of these RDs (Registered Dietitians) and RDNs (Registered Dietitian Nutritionists) over the past few months and I want you to meet them too! So here’s a (mostly) healthy recipe round up, featuring a lot of my colleagues. Get reading and eating with What to Eat in September.

I don’t usually post on a Friday morning, but my week has been a little nuts. Normally I would just wait until Monday, but I have something *super* *new* and *different* planned for Monday. Stay tuned.
I’ll try to keep this short and sweet since I know you’re reading it at your work computer and you are hitting “minimize” when your co-worker enters the office or when your boss walks by your cubicle.
[Insert diagram/infographic/datasheet here so it looks like you’re being productive.]

The. Ultimate. Sandwich.
[If you’ve been waiting, here is the Chipotle Mayo.]
This sandwich is pretty much stolen from The Porch. All I did was add an egg, which isn’t even an original idea, and then I added a letter E to change the name.
I wanted to change the name to The cBALTrEcMgsB, but that’s just not pronounceable.
BALTE, by the way, is pronounced “bahlt.” Or “bawlt” if you’re Southern.

I know some of you guys are waiting to hear what I made Chipotle Mayo for, but… Ermagherrrd. It can wait. I need to share my love for burrata cheese with the entire online world.
I mean, tomato season is on its way out the door. Don’t shoot the messenger. Just tellin’ it like it is. This is my absolute favorite way to eat tomatoes. I know I said the same thing last week. I wasn’t lying. Tomato & Goat Cheese Tart is crazy delicious. But its totally allowable to have a two-way tie, or an eight-way, or even a 17-way tie in the food world. I would say it’s encouraged even.

I swear I’m going to write about tomatoes, but all I really want to do is talk about Miller.
And how every time I get an email from a potential owner, my heart stops dead. Wee little Miller, who weighed 2.93 pounds at the vet’s office. Tiny, bouncy Miller, the snuggle partner. Her only fault is that she is so small, I might roll over and crush her one day. She had her first public outing yesterday. I found out that she is a people-person. I might have to use this to my advantage…

Happy Monday!
I had a good weekend. Not to brag or anything. The week leading up to it was pretty quiet… The Bachelorette has ended and we didn’t make up another excuse for girl’s night. Summer has kind of slowed down and I didn’t make much of an effort to pick the pace back up again.
I expected the weekend to be the same. But then it was full of random, last-minute adventures, which is the best kind of weekend. You start off slow, with no real plans, and then everything you do seems fun and surprising and spontaneous. Like…

This is my last peach recipe of the summer! Are you weeping with me? Shed tears for one minute only because juicy summer peaches may almost be behind us, but we’ve got juicy summer tomatoes ready to step in!
In other news: my teeth are doing okay. I felt well enough on Friday to lay by the pool and get sunburnt. And felt well enough on Saturday to go camping. (And by camping, I mean that I arrived at a campsite, couldn’t figure out how to hang up my borrowed hammock, got even more sunburnt, and 12 hours later my carpool drove home. And just to be clear, it’s not a “girly thing” – one in my carpool was a male and one was a dog. It’s just that we all have a great appreciation for showers, beds, and air conditioning.) And I haven’t taken pain medication in three days. So you could say I’m doing just fine.
