Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup natural peanut butter no added sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup SPLENDA® Naturals Sugar & Stevia Blend
  • 3/4 cup rolled oats
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups blackberries cut in half

Instructions

  1. Preheat oven to 350 degrees F. Coat a 9x5-inch loaf pan with cooking spray and set aside.
  2. In a large bowl, whisk together applesauce, peanut butter, eggs, and vanilla until well-combined. Add SPLENDA® Naturals and mix well.

  3. In a small bowl, mix oats, pumpkin seeds, and sunflower seeds. Set aside 2-3 tablespoons of this mixture for sprinkling on top of the loaf.
  4. Add the remaining oat mixture and the rest of the dry ingredients to the large bowl and stir until well-combined. Gently fold in berries. Pour batter into prepared pan and sprinkle top with reserved oat mixture. Bake 1 hour or until toothpick inserted into the center comes out clean.
