I had all these beets in my fridge last week and no good way to use them up. I love beets, but sometimes the cleaning and peeling and roasting and the messy pink liquid that stains your fingers and your countertops seems like a lot of trouble for a simple salad. And when I decide I’m hungry, I’m hungry RIGHT NOW. I don’t want to wait for the oven to preheat and then wait for the beets to slow roast.

I had a good weekend. Not to brag or anything. The week leading up to it was pretty quiet… The Bachelorette has ended and we didn’t make up another excuse for girl’s night. Summer has kind of slowed down and I didn’t make much of an effort to pick the pace back up again.

Yesterday was Therapy Day.
Therapy Day usually includes a full eight hours of sleep, a cup of coffee on the porch, sometimes a homemade breakfast. (Mine did.) It can include lounging on a pool float and getting slightly crispy with some friends. (Mine did.) It may include evening drinks with the girls or with the guys or with the neighbors. (Mine did.)
And Therapy Day, for me, always includes baking.

I’m officially obsessed with Basic Overnight Steel-Cut Oats. Like, can’t-go-a-morning-without-this obsessed. Like, might-cry-into-my-bowl-once-it’s-empty obsessed. Why? Because they’re EASY and chewy and satisfying without added sugar and with plenty of protein and fiber.
