I love Magnolia Bakery’s Chocolate Wafer Icebox Cake because of its simplicity. You don’t need a lot of ingredients or time to make something decadent. Layers of chocolate wafers softened by fresh whipped cream make an impressively humble dessert.

My photography skillzz were still in development back then. Heck, they are still in development today! But I’m much better off now, nine months later.

Raspberry Greek Yogurt Cake with Lemon Buttercream is tart and tangy, a bit sweet, and a little gooey with those farmer’s market raspberries. The frosting is buttery and it’s the smoothest and glossiest homemade frosting I’ve ever seen. My rule of thumb for a GREAT cake? Always pair a scratch made cake with scratch made frosting and you can’t go wrong.

My friend Chris is an old man. And old men like… loafers, and peppermint, and coffee, and the smell of tobacco, and flat caps. (I’m making so much of this up.) And butterscotch. My old man friend Chris is no exception. He likes all of the above (again, making some of this up), and he LOVES butterscotch. At least, he loves when I make homemade butterscotch treats just for him.

And, because my last butterscotch baked good gift to Chris was in December, he was due another gift. (FYI – He gets gifts because he gives gifts in return. It’s like an exchange program for food.)

My stomach is rumbling for this. I’m trying to eat it very, very slowly, so that I can write about how it tastes before I chow down and finish the pie off and then have no real, coherent thoughts or memories about how it tasted. In dietitian world, this is called mindful eating.

White Chocolate Peanut Butter Muddy Buddy Snack Mix is a mouthful to say, but it totally rings true because you are going to take so many mouthfuls. This recipe is as addictive as it is beautiful and will add a bright pop of color to your kitchen countertop. 

There are so many heavenly things about this snack mix that needed to fit in the title so you would  realize just how craveable this is. What I really want to name it is: Springtime White Chocolate Peanut Butter Muddy Buddies with Peanut AND Peanut Butter M&M’s and Pretzels. But I think there’s a character limit on blog post titles…?

I’m pulling cinnamon rolls out of the oven and I’m simmering a spicy posole for tonight’s supper. It’s THE ONLY way to get through a cold, snowy night. It makes me feel all warm and cozy on the inside.

Now I know these Cinnamon Rolls are the ‘ish because I already did a test run this weekend. While it was 20 degrees out on Sunday morning, I wore my *most flattering* sweatpants and made someone a special Valentine’s Day breakfast.  ♥ ♥ ♥        (←All those hearts are for the cinnamon rolls…)

The thing about December is… all I eat is Christmas Cookies.

I’m just not very hungry for any other foods this month. Everything in the cafeteria looks very… mehhhh. Everything at home… well, there’s nothing at home. I have no substantial food at home. And I don’t have any substantial food because I just can’t think of any appropriate breakfast, lunch, or dinner foods that I would really like to eat.

But set a plate of Christmas Cookies in front of me and I’ll have one of each, please!

[The dietitian in me wants you to know that not all of that is true. I have been eating my proteins and fibers and vegetables. I’m telling the truth about not really feeling like it, but, ya know, health is a priority and all that. ]
