I know some of you guys are waiting to hear what I made Chipotle Mayo for, but… Ermagherrrd. It can wait. I need to share my love for burrata cheese with the entire online world.

I mean, tomato season is on its way out the door. Don’t shoot the messenger. Just tellin’ it like it is. This is my absolute favorite way to eat tomatoes. I know I said the same thing last week. I wasn’t lying. Tomato & Goat Cheese Tart is crazy delicious. But its totally allowable to have a two-way tie, or an eight-way, or even a 17-way tie in the food world. I would say it’s encouraged even.

Happy Monday!

I had a good weekend. Not to brag or anything. The week leading up to it was pretty quiet… The Bachelorette has ended and we didn’t make up another excuse for girl’s night. Summer has kind of slowed down and I didn’t make much of an effort to pick the pace back up again.

There’s one thing to love about Mondays.

Mondays are a fresh start. An opportunity to reinvent yourself. A day for redesigning your outlook on life. You have the choice of waking up on the wrong side of the bed or the right side of the bed and that can set the tone for your entire week.

Really, we can do this on any day, but Monday is a natural day of renewal. Almost every Sunday, I make some promise to myself for the coming week: I will go to the gym regularly. I will be absolutely productive at work and leave on time. I will drink ten glasses of water per day. I will take “me” time, without feeling guilty.

I’m officially obsessed with Basic Overnight Steel-Cut Oats. Like, can’t-go-a-morning-without-this obsessed. Like, might-cry-into-my-bowl-once-it’s-empty obsessed. Why? Because they’re EASY and chewy and satisfying without added sugar and with plenty of protein and fiber. 

So normally I eat eggs for breakfast. By normally, I mean almost every day because they are delicious and because they are a good source of protein and because they keep me full until lunchtime. But eggs are now the stuff of Breakfasts Past and now I’m all about the Basic Overnight Steel-Cut Oats.

Fresh summer corn is probably one of my favorite foods. I know I say that about a lot of foods, but this is true. It’s actually always true… I have a lot of favorite foods! I’m a girl who loves food, what can I say?!

Even not-fresh, always-available corn (i.e. canned corn) has had a special place in my heart for a very long time. When I was still little, but big enough to use the stove, I would heat an entire can of corn, add some butter, and eat the whole thing for supper. I’m a little horrified by that idea now… but I guess it’s okay for a 10-year-old. But seriously, just horrified thinking about it. Where’s the protein? Where’s the calcium or iron or vitamin C? Oy vey… (…rolls eyes at younger self.)
