Eggs Baked in Avocado

Eggs Baked Avocado at www.mybottomlessboyfriend.com
I eat eggs for breakfast five or six times a week. Usually Egg Beaters, to be specific, piled on piece of whole wheat bread with a thin layer of sugar-free jam. I like to start my day with a substantial, healthy breakfast, high in protein and low in sugar. Aside from eggs, there aren’t a whole lot of other choices. Please let me know if there’s a huge/obvious food group out there that I’m not thinking of!

But sometimes the monotony gets to me. Plus, I LOVE a good, real egg with a runny yolk. Enter, this super-quick, make-this-even-if-you-hit-snooze-too-many-times, breakfast recipe. The protein still comes from eggs, but it’s different enough from my usual routine that I don’t feel fried. (Get it? I know… I don’t have a future in stand-up.)

And I can never, EVER stop at just one. Or two. And rarely can I stop at three.

On the way to family dinner at my parent’s house last weekend, the BBF says, “I hope your mom makes those jalapeños!” And in that moment, I saw an opportunity to remind him just how great I am.

Grilled Vanilla Bean Mascarpone Peaches with Salted Bourbon Caramel

July 20, 2014 by theeverykitchen@gmail.com Leave a Comment

Summer Peach Week is turning into summer peach weekS. My parents live close by and have peach trees. Since the fruit ripens at different times, it’s been a constant influx of fresh, homegrown peaches for the past several weeks.

I’ve had many friends send me recipes and this one looked quick, easy and unique. Everyone is making peach cobblers and crisps, tarts and pies — this recipe really focuses on the whole peach while the toppings are (AWESOME, but) secondary to the grilled fruit flavor.
