Orange Almond Chicken Lettuce Wraps are all at once sweet, salty, juicy, spicy… and sugar free, gluten free, and paleo! This weeknight recipe can be on the table in 20 minutes. Share with your family or make it for yourself because it’s also easy to pack for lunch the next day and it’s even good cold. Trust me… I tried it!

Okay… so not lettuce wraps. Whoops. But they started out as lettuce wraps and then the cabbage was so beautiful and purple and glossy and then I didn’t want the lettuce anymore, but what am I supposed to call these then? Chicken Cabbage Wraps? That’s weird. And so I kept the name Orange Almond Chicken Lettuce Wraps and I’m not sure that I should even be mentioning it because I bet no one would notice. But leave it to me to point out the elephant in the room. Let’s just get the awkward stuff outta the way, mmkay?

My Skinny and Seasoned Salty Dog is sweet and spicy, clocking in well under 100 calories. This citrusy recipe will aid the move from spring into the dead heat of summer. Be it a bridal shower, graduation, or Memorial Day party, the Skinny and Seasoned Salty Dog is sure to steal the show. 

This is actually my very first cocktail recipe for the blog. Funny because I make cocktails all the time. Mine are usually just like, “Oh, what do we have in the fridge? How can I turn this into something alcoholic? Do you think that’d be good with some vodka?” Super un-fancy. Super un-classy. But ya know, I think I’ve learned my lesson. Skinny and Seasoned Salty Dog is super easy and super classy and I already had all of the ingredients in my fridge. My eyes have been opened and I’m taking my mixology up a notch from now on.

Paleo Southern Biscuits are light and fluffy with soft undertones of butter and subtle hints of coconut. This recipe uses almond flour and coconut flour, making them a grain-free alternative to buttermilk biscuits. Eat them warm with a pat of butter, a drizzle of honey, or topped with a runny egg!

I haven’t gotten personal with you friends in a while. I used to talk regularly about my social calendar, who I was dating, and my deepest thoughts on life. I’ve lightened up these easy 7-Layer Sheet Pan Nachos by using baked tortilla chips, reduced fat cheese, nonfat Greek yogurt (in place of sour cream), and a ton of fresh veggies. This recipe is super versatile and if you prefer to use black beans or to add chicken, ground beef, extra cheese, or different veggies. I say go for it!
