I really honestly never thought I’d feel this way about a quinoa salad. But oh-my-dear Citrus Avocado Quinoa Salad with Honey Walnuts, will you marry me? I think you are beautiful and colorful. You are sweet and bright and rich. You’re crisp and creamy and juicy. You are simplistically complex in a nearly impossible way. You are a dish that I have only ever met in my dreams and yet, here you are….
It’s 6am and I’m eating Creamy Mushroom Soup. I know that’s weird, but it’s kind of not weird too because this soup is really good. Like, I’m really happy to be eating it right now. Which, that is weird too. So maybe it’s just me.
Ekkk. I know. This is very bittersweet for me. So many mixed feelings.
Let’s talk about the salad first, mmmkay?
I kind of wanted to call this Spring Bikini Salad because that’s mah goal. Beach volleyball will be here before we know it. And even if we don’t actually play, we wanna look good in our short shorts sipping on beachtinis. Am I right?
Okay friends. I have a treat for you. Actually, I have two treats for you. One: Smoky Pumpkin Hummus (obvs). Two: The secret to productivity. THE secret. I have figured it out and now you’re all dying to know.
Which treat do you want first? I know… that’s a tough question. But that’s how I do – I just come out, guns a’blazin,’ asking you to reveal your heart’s truest, deepest, most magical desires. And I think that you desire hummus first and foremost. But only because it’s Smoky Pumpkin Hummus.
Back to the food!
Well, almost… I just want to say how much I love you guys. I’d like to write an entire warm-fuzzy post about all you blog friends, but I’ll keep it short and sweet and just say that I have the best Internet friends and the best in-person friends a girl could ask for and since I’m fat and happy on all the love in my life this past weekend, let’s lean out a little with something green.
There’s one thing to love about Mondays.
Mondays are a fresh start. An opportunity to reinvent yourself. A day for redesigning your outlook on life. You have the choice of waking up on the wrong side of the bed or the right side of the bed and that can set the tone for your entire week.
Really, we can do this on any day, but Monday is a natural day of renewal. Almost every Sunday, I make some promise to myself for the coming week: I will go to the gym regularly. I will be absolutely productive at work and leave on time. I will drink ten glasses of water per day. I will take “me” time, without feeling guilty.
I’m officially obsessed with Basic Overnight Steel-Cut Oats. Like, can’t-go-a-morning-without-this obsessed. Like, might-cry-into-my-bowl-once-it’s-empty obsessed. Why? Because they’re EASY and chewy and satisfying without added sugar and with plenty of protein and fiber.
So normally I eat eggs for breakfast. By normally, I mean almost every day because they are delicious and because they are a good source of protein and because they keep me full until lunchtime. But eggs are now the stuff of Breakfasts Past and now I’m all about the Basic Overnight Steel-Cut Oats.
