Farmer’s Market Succotash is the absolute best way I’ve ever eaten veggies in my entire life. The recipe keeps it simple, so we really enjoy the seasonal, farm-to-table summer flavors.

I’m not lying when I say this: I don’t think I’ve ever seen something disappear from my fridge faster than Farmer’s Market Succotash. It’s just a pot of vegetables. But really, really well-prepared, simply made, fresh, seasonal, farm-to-table vegetables.

Spicy Peach Mezcal Mule-Ritas are frothy and sweet with fresh summer peaches. Mezcal adds smoke and jalapeños add a zing. And the best part? They’re ready in five minutes!

Current problem: How do I fit all the star ingredients in this cocktail into a single title that will fit on one line and simply roll off your tongue? Spicy Peach Mezcal Mule-Rita, that’s how. I conquered, but I had to make up a word in the process. Then I think to myself, when did “mule” come to mean “with ginger beer” and when did “margarita” come to mean “with tequila?” Maybe Mule-Rita is gonna be the next big thing. Maybe I’m starting a trend.

RumChata Blondies with Fireball Cream Cheese Frosting are the perfect summer party dessert. This recipe will not fail to impress. Trust me, I’ve made it five times in five weeks and my friends keep asking for more!

It took me four tries. FOUR. And thank heavens I kept trying because RumChata Blondies with Fireball Cream Cheese Frosting are SLAMMIN’. On the first three tries, I was set on a cream cheese swirl because I thought cream cheese frosting would be too sweet. I will admit, I was wrong. These are fantabulous x19203 and everyone has agreed.

Chile-Mint Mahi Mahi Burgers are your favorite burger substitute this summer! This healthy recipe is low in calories, high in protein, and absolutely killing it with flavor. Make them on the grill or on your stove top for Memorial Day, Labor Day, and all those hot, outdoor days in between.

I first published Chile-Mint Mahi Mahi Burgers on July 25, 2014 — almost three years ago. I took no original photos, so I’m updating it today to include my own pics. However, I am keeping the rest of the content the same for the sake of nostalgia and so we can laugh at me-three-years-ago. 🙂

My Skinny and Seasoned Salty Dog is sweet and spicy, clocking in well under 100 calories. This citrusy recipe will aid the move from spring into the dead heat of summer. Be it a bridal shower, graduation, or Memorial Day party, the Skinny and Seasoned Salty Dog is sure to steal the show.

This is actually my very first cocktail recipe for the blog. Funny because I make cocktails all the time. Mine are usually just like, “Oh, what do we have in the fridge? How can I turn this into something alcoholic? Do you think that’d be good with some vodka?” Super un-fancy. Super un-classy. But ya know, I think I’ve learned my lesson. Skinny and Seasoned Salty Dog is super easy and super classy and I already had all of the ingredients in my fridge. My eyes have been opened and I’m taking my mixology up a notch from now on.

I've swapped some ingredients to lighten my 7-Layer Sheet Pan Nachos. This recipe is easy and versatile, so if you want to make changes, I say go for it! | theeverykitchen.com
I’ve lightened up these easy 7-Layer Sheet Pan Nachos by using baked tortilla chips, reduced fat cheese, nonfat Greek yogurt (in place of sour cream), and a ton of fresh veggies. This recipe is super versatile and if you prefer to use black beans or to add chicken, ground beef, extra cheese, or different veggies. I say go for it! I do recommend always serving with margaritas.
