Rocky Road Fudge Bars will make people fall in love with you… consider this your warning. This chocolatey, nutty, creamy layered bar is a standard at every family barbecue and summer holiday party and will be for years to come. I get constant comments that it’s sweet, but not too sweet, and could I have another one, please?!

I feel like I’ve been making a ton of not-so-nutritious foods lately and this is supposed to be a mostly nutritious blog. I’ve definitely pushing the limits of that word “mostly.” But ya know what? Someone challenged me recently to share my very first food photo on the Insta… and it wasn’t pretty. I first made these Rocky Road Fudge Bars on June 20, 2014 — more than three years ago! — and today I’m updating the post with some new photos.

I made this puppy on Saturday night. Yep, Saturday PM, in the eve, late-night style. I know a 20-something city-slicker should be out doing 20-something city-slicking things, but you guys — I’m really a mid-30s-year-old at heart. In my heart, I’m maybe 36 and I have two small children in bed and a husband watching some man movie on the couch. Oh heyyyy, Christmas cookies. There you are. Thought I forgot about you, huh?

Nope. This is the opposite of forgetting about cookies. I sent these cookies to a friend back in April and I’ve been dreaming of double fudgy chewy moist decadent chocolatey chip cookies ever since. But those cookies didn’t have peppermint. Little chewy and crunchy half-melted red-swirled peppermints that elevate the cookies from oh-mah-gah-must-eat-one-now to oh-mah-gah-must-eat-EVERYSINGLEONE-now.

I do wanna talk about that, but I just went to this really wonderful wedding and let me take a sec to touch on that really fast. My brother got married and I now have the absolute coolest sister-in-law a girl could ask for. I will say that I’ve decided I never want to get married because I just can’t top that. That was the most fun I’ve ever had in one weekend and I will die happy now. I’ll want to throw some wedding pictures up here eventually, but if you are friends with me on Facebook, you’ve already seen a thousand pictures of me (and one or two of the bride and groom), and you’re ready for me to get to the food part of this blog post.

My friend Chris is an old man. And old men like… loafers, and peppermint, and coffee, and the smell of tobacco, and flat caps. (I’m making so much of this up.) And butterscotch. My old man friend Chris is no exception. He likes all of the above (again, making some of this up), and he LOVES butterscotch. At least, he loves when I make homemade butterscotch treats just for him.

And, because my last butterscotch baked good gift to Chris was in December, he was due another gift. (FYI – He gets gifts because he gives gifts in return. It’s like an exchange program for food.)
