For the salad:

  • 4 cups red or green spinach
  • 1 cup cooked quinoa
  • 1 pear cored and thinly sliced
  • 1/4 cup sliced or chopped almonds
  • 1/4 cup unsweetened coconut flakes

For the dressing:

  • 1 tablespoon apple cider vinegar
  • 2 tablespoons grapeseed oil
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons honey


  1. Combine all salad ingredients in a large bowl.
  2. In a small bowl, whisk together all the dressing ingredients. Drizzle dressing over the salad and toss to coat.
