Red Onion Steak with Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes
  • 1 large red onion sliced into circular discs
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 12-ounce sirloin steak
  • 1 sprig of fresh thyme leaves removed
  • Garnish as desired with butter, salt and pepper, fresh thyme leaves

Instructions

  1. Preheat oven to 400 degrees and prepare a baking sheet with cooking spray. Slice sweet potatoes lengthwise and place face-down on baking sheet. Cover with tinfoil and bake 30 minutes or until potatoes are tender. Add salt and pepper to taste.
  2. Meanwhile, preheat broiler and coat a large nonstick skillet. Place over medium-high heat. Add red onion. Cover and cook 3 minutes. Add red wine vinegar, honey, garlic powder and a dash of salt. Reduce heat and simmer uncovered 8 minutes or until slightly thick, stirring occasionally.
  3. While the potatoes and onion are cooking, prepare steaks. Season steaks with salt and pepper and fresh thyme. Coat a broiler pan with cooking spray. Place steaks on the pan and broil 1 minute per side. Slice into the thickest part of the steak to check for desire doneness. Continue to broil if desired.
  4. To serve, place one steak and one sweet potato on each plate. Top steaks evenly with onions and the glaze leftover in the skillet. Add butter to sweet potatoes if desired and sprinkle steak with salt, pepper, and thyme.
