Ingredients

  • 36 large cherries
  • 2 tablespoons sugar
  • 10 ounces crumbled goat cheese room temperature
  • 2 ounces whipped cream cheese room temperature
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh thyme leaves

Instructions

  1. Preheat your oven to 400 degrees F. Line a baking sheet with foil.
  2. In a small bowl, toss the cherries and sugar together then arrange in a single layer on your prepared baking sheet. Roast until the sugar melts and begins to caramelize and the cherries start to release their juices, about 15 minutes. Toss every 5 minutes to keep cherries from burning. Once cherries are done roasting, transfer to a bowl and refrigerate about 15 minutes until cool enough to handle. When cherries are cool to touch, slice each cherry in half and remove the pit. Reserve the cherry juice.
  3. Meanwhile, add goat cheese, cream cheese, and pepper to a food processor and blend until uniform and soft.
  4. Spread each cracker with about 1 tablespoon of the whipped goat cheese. Top with 1 1/2 roasted cherries and sprinkle with thyme. Drizzle with reserved cherry juice just before serving.
