Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground black pepper
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh sage
  • 16 ounces boneless pork chops trimmed
  • 1 pound baby red potatoes halved
  • 2 large apples cored and sliced
  • 1 large onion cut into 1-inch cubes

Instructions

  1. Preheat oven to 400 degrees F. Coat a large sheet pan with cooking spray.
  2. In a large bowl, whisk together olive oil, lemon juice, pepper, garlic, and sage. Toss the potatoes in the marinade and transfer to one side of the baking sheet using a slotted spoon. Roast in the oven for 10 minutes.
  3. While the potatoes are getting started, lay your pork chops in the marinade. When you remove the potatoes from the oven, transfer your pork to the center of the baking sheet. Toss the onions in the remaining marinade and transfer to one corner of your sheet pan using a slotted spoon. Do the same for the apples. If you start to run low on marinade, add more fresh lemon juice. Return the sheet pan to the oven and roast an additional 25-30 minutes until potatoes, onions, and apples are tender and pork is cooked through. Remove from oven and sprinkle with fresh sage before serving.
