For the brine:
2 1/2cupswarm water
1/4cupsalt
1/4cupsugar
5poundwhole chickenor similar size
For the marinade:
1 ½cupsplain fat free yogurt
¼cupchopped rosemary
½tbspground cloves
2clovesgarlic
2tbsplemon juice
1/2tspsalt
1/4tspblack pepper
Instructions
Brine the chicken. In a large bowl, combine water, salt, and sugar. Whisk until salt and sugar are dissolved. Add chicken and let soak for 30 minutes. Remove, rinse, and pat dry. Let sit in the refrigerator for a couple of hours.
Prepare the marinade: In a medium bowl, combine all ingredients for the marinade. Rub evenly over every surface of the chicken.
Preheat air fryer to 350 degrees F. Spray air fryer basket with cooking spray. Place the chicken in the air fryer and cook 30 minutes. Turn the chicken over and cook another 30 minutes or until completely cooked through. Skin should be crispy.
