The Fudgiest Brownies on Earth


This is called killing two birds with one stone.

My blogging duties are caught right in between the Superbowl and Valentine’s Day and these brownies are PERFECT in general and also perfect for game watchin’ and for impressin’ the men in your life (or ladies or friends or luvahhhhs). They’re also PERFECT for the other 363 days of the year. Pinkie promise.



Let’s talk about how these brownies came to fruition.

I looked at my roommate one Saturday night and very coolly said, “Let’s stay in, watch a chick flick, gossip, and relax.” That’s what I said. In my head, it went more like this: “Let’s stay in so that my liver can rest and so that my waistline can recover from all the Friday and Saturday parties and bar hops and all the Thursday Happy Hours and all the Thank-God-Monday-is-Over glasses of wine and the late night food and early brunch and then the brunch leftovers and restaurant week dinners and late-night snacks. Oh yeah, and the Stan’s Donuts, which are ridiculous.”



My roommate replied, “Yeah, and let’s make brownie sundaes. You like to bake, right? I’ll run out and get the ingredients if you’ll bake. Do you like cakey or fudgy? I like reallllly fudgy brownies. Do you know a recipe? We can top them with salted caramel ice cream and should I get whipped cream too?”


Well, it turns out, we have the same taste in brownies. I like the fudgiestttt brownies and I always underbake a little bit to get them that way.

But THESE. These brownies are baked for a full 30 minutes, no pulling the pan out early. And look at them. Look at how glossy and creamy they are in the middle, with that thin little crispy layer on top. Look how perfectly they slice into huge, firm squares — a perfect base for a brownie sundae or for dipping into a glass of milk.


Truth be told, I made these brownies for our brownie sundae Saturday night and then I made them again for you guys because they ARE as perfect as I’m saying they are and I think every one of you friends needs to pull out your double boilers and your electric hand mixers and your square baking pans and get these on the table. Whether for Superbowl game day or Valentine’s Day, these Fudgiest Brownies Ever are going to get you some serious LOVE.

The Fudgiest Brownies on Earth

Ingredients

  • 8 tablespoons unsalted butter
  • 6 ounces bittersweet chocolate finely chopped
  • 2 ounces unsweetened chocolate finely chopped
  • 1 cup plus 2 tablespoons granulated sugar
  • 3 large eggs
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons cocoa

Instructions

  1. Adjust oven rack to middle position and preheat to 350°F. Line an 8x8 baking dish with foil and lightly coat with cooking spray.
  2. Place butter, bittersweet chocolate, and unsweetened chocolate in double boiler bowl. Gently heat until just melted, stirring occasionally. Remove from heat and let cool slightly.
  3. Using a hand mixer, whisk sugar, eggs, salt, and vanilla in large bowl until light. Whisk in chocolate mixture until thick and glossy. Add flour and cocoa and stir until just combined.
  4. Pour into prepared pan and bake until just set, about 30 minutes. Let cool completely in pan before gently lifting them out using the foil overhang.
