Yep, just as I thought. Zero hands. It’s 90 degrees here in Chicago, so I can only imagine what it’s like for my friends south of the Mason Dixon. I’ve been eating a lot of pineapple (carbs), beef jerky (protein), and sunflower seeds (healthy fats), just to avoid cooking. Friends, I do realize this is a sad, sad, excuse of a diet for someone who works in the food business AND runs a food blog.

And if I’m being totally honest, the heat situation hasn’t stopped me from turning my oven on to make Strawberry Lemon Bars (coming soon), Cupboard Cookies (coming soon), and Better Than Boyfriend Brownies (coming soon). Obviously, I have very specific tastes (yum, sugar) when it comes to baking things in my oven.

But Air Fryer Spiced Potato Wedges are oven-free (and deep fryer-free, heyyyo!) and that makes them totally doable and easy any time of year, even in sub-Sahara temps. You won’t set your entire house aflame with the heat of your huge 350 degree oven. And you won’t have to submerge your fresh potatoes in hot oil. And ya know what? Air Fryer Spiced Potato Wedges will still have that nice crispy finish with golden-fried hue.

Ingredients

  • 5 medium baking potatoes
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1/4 teaspoon salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons ground cumin
  • 1/2 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 tablespoon chopped fresh cilantro
  • 1/2 cup chopped scallions for garnish (if desired)

Instructions

  1. Preheat air fryer to 450 degrees F.

  2. Cut potatoes lengthwise into 8 wedges each. Transfer to a large bowl and toss with olive oil oil until evenly coated. Place potato wedges in a single layer in an air fryer and cook 15 minutes, turning once or until golden brown and crispy. You may have to cook the potato wedges in batches. While still hot, toss potatoes with chili spice rub.Sprinkle with chopped scallions and serve.

  3. While potatoes are cooking, prepare the seasoning. In a large bowl, combine all dry ingredients and cilantro. As potatoes come out of the air fryer, transfer to the bowl of seasoning and toss.

  4. Sprinkle with chopped scallions before serving, if desired.
