I went to bed at 7:50 p.m. last night, so I get it. You want dinner and you want it fast. And that’s where sheet pan meals come in. Hands in the air if you’ve ever tried one! Yep, that’s right. And keep ’em up if you love sheet pan meals. Okay, yeah, totally what I expected. Everyone in *this imaginary room* right now has his hand up.



Somehow, despite nine full hours of sleep, my eyes are still itchy and my mind is still tired and I’m daydreaming / real dreaming because I might actually be asleep and just sleep walking zombie-like through my day while appearing to be normal but not actually being here at all.

If that sentence made any sense to you whatsoever, I’m sorry. It means you are on my level. Which usually is a good thing, but maybe not today.


My inspiration for this Sheet Pan Sage Pork with Apples and Potatoes was “Imma make it as quick and easy as possible,” for ME and for all of us. I love the summer — it’s definitely my favorite season — but I am prepared to leave it behind. There are so many activities and I’m tired. Aren’t we all? Work, summer vacations, street festivals, art fairs, baseball games, outdoor concerts, long runs, beach days, KIDS (thank goodness I don’t have kids because I just don’t even know how you mamas do it!). I’ve been go, go, go for months now and I’m ready to slow, slow, slow. And the fall just feels like it’s gonna be slower.

Pro tip: Channel me and take your Sheet Pan Sage Pork with Apples and Potatoes one step further — meal prep with it. That’s right. I’m doing double duty quick and easy meals with sheet pans AND meal prep both at the same time. (Although, pretty much when you cook for one, everything you cook could be considered meal-prepping. Cook once, eat for a week. The upside of singledom.) And that, my friends, is how I’m able to get to bed at 7:50 p.m.


The last thing I want to talk about in this non-sequitur post is the flavors. Sage and apples. Apples and sage. Apples we are all familiar with. I’ll let your creative mind wander with those juicy, sweet, tender, roasted apples. Let’s sage it out for a second. Sage is a synonym for “warm,” “fuzzy,” “fall,” “comfy,” “mugs of warm things,” “deep sleeps with wonderful dreams,” “pup snuggles,” “sinking into that dippy place in the couch surrounded by pillows and warm blankets.”

So if there’s any reason to make Sheet Pan Sage Pork with Apples and Potatoes, it’s got to be the sage. Or the quick and easy. It’s a toss-up. But sage wins my heart over every time.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground black pepper
  • 3 cloves garlic minced
  • 2 tablespoons chopped fresh sage
  • 16 ounces boneless pork chops trimmed
  • 1 pound baby red potatoes halved
  • 2 large apples cored and sliced
  • 1 large onion cut into 1-inch cubes

Instructions

  1. Preheat oven to 400 degrees F. Coat a large sheet pan with cooking spray.
  2. In a large bowl, whisk together olive oil, lemon juice, pepper, garlic, and sage. Toss the potatoes in the marinade and transfer to one side of the baking sheet using a slotted spoon. Roast in the oven for 10 minutes.
  3. While the potatoes are getting started, lay your pork chops in the marinade. When you remove the potatoes from the oven, transfer your pork to the center of the baking sheet. Toss the onions in the remaining marinade and transfer to one corner of your sheet pan using a slotted spoon. Do the same for the apples. If you start to run low on marinade, add more fresh lemon juice. Return the sheet pan to the oven and roast an additional 25-30 minutes until potatoes, onions, and apples are tender and pork is cooked through. Remove from oven and sprinkle with fresh sage before serving.
