Smoked Salmon Salad Bites take just five minutes to make and are perfect for a quick snack or light meal. This recipe is low in calories, but packed with protein and those good-for-you fats.

I searched “smoked salmon” on Pinterest because I wasn’t sure what to names these little smoked salmon-cucumber-hors d’oeuvres-snack-bites. Although, come to think of, that’s a pretty good name.

Anyway, back to Pinterest. My Pinterest search opened my eyes to the world of smoked salmon. It’s not just for bagels and cream cheese, in fact, what I found is better than bagels and cream cheese. I found smoked salmon pasta and omelets and soups and grilled cheese. So many possibilities! And since I am newly a lover of smoked salmon, there will most likely be more recipes to come. My stomach is growling just thinking about it.


A word of caution about these lovely protein-packed, low-calorie Smoked Salmon Salad Bites — the smoked salmon makes them a bit on the salty side. But take that with a grain of salt (pun intended), for I am a person who never salts anything (except mashed potatoes — MMMMMMM…). You could use crackers as a base for this snack, but the watery cucumbers really balance the salty salmon well.

And that’s all I’ve got for you today, my blog friends. I’m so exhausted. But I promise you will love every little bite of Smoked Salmon Salad Bites, and so will your girlfriends when you invite them over for Girl’s Night and your boyfriends when you pack a little picnic and your Mom who is always looking for healthy options and your neighbors at that afternoon block party. I know because I’ve eaten all of them, which makes me a total expert. 100%.


An extra bonus because there are just too many hours in the day and I have a lot of free time on my hands (LIES), I took some glamor shots of these best friends. They kept me company on the porch while I photographed the Smoked Salmon Salad Bites and they are just so darn cute that my camera lens found its way in their direction. And probably no one is even interested in these shots except for Julia, who is my roommate and Willy’s owner, but I think KitKat and Willy are bee-you-tiful and they bring me so much joy.

Smoked Salmon Salad Bites

Smoked Salmon Salad Bites take just five minutes to make and are perfect for a quick snack or light meal. This recipe is low in calories, but packed with protein and those good-for-you fats. Recipe adapted from Set the Table. Serves 4 as an appetizer or 2 as a light meal.

Ingredients

  • 1/3 cup light sour cream
  • 2 tablespoons whipped cream cheese or 1/3 less fat cream cheese
  • 1 scallion, chopped plus more for garnish
  • 1 tablespoons lemon juice
  • 4 ounces smoked salmon
  • 1 cucumber, sliced for serving

Instructions

  1. In a medium bowl, combine the sour cream, cream cheese, scallion and lemon juice in a medium bowl. Break up the salmon with a fork and fold it into the sour cream mixture.
  2. Dollop spoonfuls of salmon salad onto cucumber slices to serve. You could also serve on crackers or use as a salad topping.
