Salmon Nicoise Salad with Dijon Caper Dressing tastes like a “treat yourself” meal, but it’s gluten free, sugar free, low-carb, paleo-friendly, and deceptively easy to prepare. I developed this recipe for Healy Eats Real, so click here to get the recipe!

Air Fryer Coconut Shrimp with Piña Colada Dip

Air Fryer Coconut Shrimp with Piña Colada Dip is a healthy, tropical summer appetizer. Eat four or five of them paired with a side salad for a light meal. Air frying shaves off calories and fat, but you keeps the shrimp brown and crispy.

Chile-Mint Mahi Mahi Burgers are your favorite burger substitute this summer! This healthy recipe is low in calories, high in protein, and absolutely killing it with flavor. Make them on the grill or on your stove top for Memorial Day, Labor Day, and all those hot, outdoor days in between.

I first published Chile-Mint Mahi Mahi Burgers on July 25, 2014 — almost three years ago. I took no original photos, so I’m updating it today to include my own pics. However, I am keeping the rest of the content the same for the sake of nostalgia and so we can laugh at me-three-years-ago. 🙂

Our okonomiyaki is made of red cabbage and topped with pickled pink ginger, scallions, and dried seaweed, but since okonomi translates to “how you like,” you can make okonomiyaki with any mix of ingredients and toppings you choose.
