Air Fryer Coconut Shrimp with Piña Colada Dip is a healthy, tropical summer appetizer. Eat four or five of them paired with a side salad for a light meal. Air frying shaves off calories and fat, but you keeps the shrimp brown and crispy.

There is nothing worse in my window unit Chicago apartment than turning on the oven in July. Except, perhaps, turning on the oven in August. The kitchen is the only room in my apartment without an AC unit and many a day you can find me foodblogging away over the oven or stove, droplets of sweat beading on my forehead and pooling right under my eyes. Dear Readers and Friends, I thought I had written this post in advance as I am on vacation. So here I am in Lake Tahoe with 15 other friends-skiers-snowboarders on Day 3 of 4 of shredding the slopes. Leave it to me to make a chilled soup in the middle of winter.

I just got an idea and ran with it and, little did I know, when my idea came to fruition, it would taste better as a cool summery soup than as a warm wintery one. Sometimes these things happen. Whatcha gonna do? (Shrugs shoulders.)

I went to one of my favorite local restaurants last weekend and ate a bowl of mussels in a red coconut curry sauce. And ya know what? It ruined me+mussels for the rest of my life, unless said mussels happen to be hanging out in a swimming pool of delightfully creamy and smoky red coconut curry sauce. In which case, they are goners.

I know what you need. Because who doesn’t need this from time to time? You need a comfy-cozy food blanket to burrow into. Something that gives you the warm-fuzzies from your tummy to your toes. And I’ve got just the one.

I’d like to say that I enjoyed this dinner snuggled up on the couch watching a Meg Ryan movie and sipping warm apple cider. It would have been nice to spoon this up over a candle-lit table and a nice bottle of red wine. But no, the universe had different plans for me.
