This authentic recipe for Ragù alla Bolognese is well worth the hour it takes to make. You’ll have plenty for a family dinner, plus extra for the freezer. You should also know that it’s damn delicious and it very well may make you cry. 

I met Nico in Spain.

I met him on my second night in Spain in a dormitory in a small place called Roncesvalles. I only spoke with him briefly, but I remembered him. Maybe it was something in those deep, chocolate eyes of his. Or the cadence of his conversation — that Italian lilt.

Does this sound like a love story yet? It sort of is. I fell in love with many people and things in Spain and Nico is one of them.

I haven’t totally thrown healthy out the window, okay? I know there have been pies and dips and talk of cinnamon rolls. This cold weather + holiday inklings in my heart bring out the comfort food desires.

Comfort food sometimes get a bad rap. But ya know what? Comfort food is always healthy in at least one way — it’s always healthy for the soul. I know what you need. Because who doesn’t need this from time to time? You need a comfy-cozy food blanket to burrow into. Something that gives you the warm-fuzzies from your tummy to your toes. And I’ve got just the one.

I’d like to say that I enjoyed this dinner snuggled up on the couch watching a Meg Ryan movie and sipping warm apple cider. It would have been nice to spoon this up over a candle-lit table and a nice bottle of red wine. But no, the universe had different plans for me.
