This authentic recipe for Ragù alla Bolognese is well worth the hour it takes to make. You’ll have plenty for a family dinner, plus extra for the freezer. You should also know that it’s damn delicious and it very well may make you cry.

I met Nico in Spain.

I met him on my second night in Spain in a dormitory in a small place called Roncesvalles. I only spoke with him briefly, but I remembered him. Maybe it was something in those deep, chocolate eyes of his. Or the cadence of his conversation — that Italian lilt.

Does this sound like a love story yet? It sort of is. I fell in love with many people and things in Spain and Nico is one of them.

Better-For-You Beef Stroganoff is a recipe will keep you warm and happy even on the coldest days. Shhh… the skinny secret is Greek yogurt!

Normally I publish at 9:30 a.m. on. the. dot. because… because I don’t know why. I just do. But today I did the unthinkable: I slept in an extra hour. And so you’re getting Better-For-You Beef Stroganoff at 10:30 a.m. instead.

I played tennis last night. I drank margaritas last night. It was National Margarita Day, which I found out at exactly the same moment I was told the tennis courts didn’t have nets. It seemed like a sign from God. I drank two margs, ate some nachos, rolled home fairly early – before 10 p.m., I think – but then spent a good deal of time snuggled up on the couch with Miller, staring at the ceiling, being very comfy and content.

How do you put the most incredible week of your life into words? How do you condense it into 20 pictures or less? I’m never at a loss for words — not when I’ve got my virtual pen to paper. But here I am…

I suppose I could start by writing about the food… Easy Thai Coconut Curry Noodles (Khao Soi) was one of our first meals on that side of the Pacific and easily one of my top two for the week. I craved it for the duration of our vacation, but was determined not to eat the same thing twice. Now that I’m home, I’m Americanizing and easifying it and adding it to the regular dinner rotation.

Boy do I just crave ramen sometimes. I am not a noodle person. I have no idea why I have this crazy noodle soup craving. Maybe it’s the cooler weather or the shorter days. Maybe it’s the cold I can’t kick. But all I want is a big, brothy bowl of Roasted Pumpkin Ramen.

Gorgonzola Pasta with Cranberries and Pistachios | www.theeverykitchen.com
If I’d written this post last night, I’m sure I’d have more than plenty to say about Gorgonzola Pasta. But now, I’m in the middle of binge-watching The Great British Baking Show and all I can think about is Magnolia Bakery’s Chocolate Wafer Icebox Cake, which makes absolutely no sense since that is a decidedly un-British dessert. Nor is it baked. So… [shrugs shoulders].
