Chipotles in adobo sauce, friends. That’s where it’s at. One-Pot Chipotle Sweet Potato Chili is super simple (you’re welcome), but then you take it up a notch with those chipotles. Eating it is giving me goosebumps and making my nose runny. I know that’s a really weird thing to say and may not sound at all desirable when we’re talking about food, but that heat – it goes down and spreads out and warms your body in the best way. Don’t fight it. And really, don’t fight it because it takes only 20 – that’s TWENTY(!) – minutes to make One-Pot Chipotle Sweet Potato Chili, so why not?!

I suppose I could start by writing about the food… Easy Thai Coconut Curry Noodles (Khao Soi) was one of our first meals on that side of the Pacific and easily one of my top two for the week. I craved it for the duration of our vacation, but was determined not to eat the same thing twice. Now that I’m home, I’m Americanizing and easifying it and adding it to the regular dinner rotation.

It’s comfort food time of year, people. And yet, I’m typing this up on a Monday morning with a large mug of herbal tea and a cold-pressed green juice that tastes like celery and cucumbers – two foods I’m not super fond of – but the point is, while my body really needs all the hydration and vitamin A it can get (120% in my green juice!), I’m just having all the feelings for soups and casseroles and banana bread right now.
You friends DO NOT want to see the failure that tried to be Slow-Cooker Banana Bread yesterday. It’s rubbery and just, BLEH. Slow cookers are magical for certain menu items, but bread is not one of them. Let’s leave it at that.

My pipes froze over the weekend. But thankfully I had a batch of this Spiced Pork Posole ready to zap in the microwave.
It may not have been enough to thaw the pipes, but it unfroze my soul.
Just kidding. My soul is pretty warm-fuzzy.
An FYI about frozen pipes — they are not fun. I returned from work one day, got undressed for a post-work rinse, which takes a lot of courage since my house is not exactly winterized (single-pane windows, thermostat set to 65…). I turn on the bathtub faucet only to be met with a quick spit of water, a few gurgly sounds, and then a puff of dust. (There probably wasn’t dust — I might have conjured that bit in my imagination.)
