Okay people. I’m watching This is Us. (Actually, my roommates are watching This is Us and I’m blogging and picking up all the ooey-gooey parts of the episode). It must be a Valentine’s Day episode. Everyone is falling in love and doing romantical gestures and saying the I Love You’s like the phrase is gonna stop existing! Whatever you do, do NOT let your Significant Other watch this episode. You will be expected to get down on one knee and propose marriage or propose renewal of vows or propose something just as grandiose when all you really really wanna do is propose making Red Onion Steak with Sweet Potatoes together.



10 Steps to Valentine’s Day Dinner:

  1. Boy gets a cleaning service.
  2. Girl arrives at boy’s clean house.
  3. Girl kisses boy on cheek.
  4. Boy has all recipe ingredients.
  5. Boy pours glasses of red wine.
  6. Girl kisses boy on mouth.
  7. Boy prepares sweet potatoes while girl prepares onion.
  8. And boy prepares steak while girl sips wine.
  9. Boy overcooks steak, but stays very good-natured while girl laughs.
  10. And then they eat Red Onion Steak with Sweet Potatoes whilst holding hands and smiling and nervously giggling. And then there’s more kissing. And more giggling. And so on and so forth.

And did I mention – Girl is so impressed.

I mean, listen — Boy barely did anything! Barely anything. And he gets to reap the rewards. But also, girl barely did anything either. So you both come out on top!

Red Onion Steak with Sweet Potatoes

An easy and flavorful dinner for two.

Ingredients

  • 2 medium sweet potatoes
  • 1 large red onion sliced into circular discs
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 12-ounce sirloin steak
  • 1 sprig of fresh thyme leaves removed
  • Garnish as desired with butter, salt and pepper, fresh thyme leaves

Instructions

  1. Preheat oven to 400 degrees and prepare a baking sheet with cooking spray. Slice sweet potatoes lengthwise and place face-down on baking sheet. Cover with tinfoil and bake 30 minutes or until potatoes are tender. Add salt and pepper to taste.
  2. Meanwhile, preheat broiler and coat a large nonstick skillet. Place over medium-high heat. Add red onion. Cover and cook 3 minutes. Add red wine vinegar, honey, garlic powder and a dash of salt. Reduce heat and simmer uncovered 8 minutes or until slightly thick, stirring occasionally.
  3. While the potatoes and onion are cooking, prepare steaks. Season steaks with salt and pepper and fresh thyme. Coat a broiler pan with cooking spray. Place steaks on the pan and broil 1 minute per side. Slice into the thickest part of the steak to check for desire doneness. Continue to broil if desired.
  4. To serve, place one steak and one sweet potato on each plate. Top steaks evenly with onions and the glaze leftover in the skillet. Add butter to sweet potatoes if desired and sprinkle steak with salt, pepper, and thyme.
