Buffalo Chicken on a Stick with Blue Cheese Dip


March Madness is still in full swing. Remind me what sport we’re watching? Is it college or pro? Who’s winning?

As a Carolina grad, ignoring the March Madness hype is a heinous crime. So, all my Tarheel friends, please stop reading here and skip to the recipe below —


(I’ve just never been big on basketball. Shhh… Don’t let them know.)


I always just smile and nod and say, “I agree,” when my friends start talking basketball and telling me all about Player XYZ who is leaving for the NBA and, Oh No We Are Going To Lose Him!, but we are recruiting Player PQR and Mr. EFG is returning as assistant coach, so we might have to build for a year or two, but we’ll be National Champs again soon!

Smile. Nod. “I agree.”


Ya know what I DO love about March Madness? The food. Sit me down in front of a TV — don’t care what sport, what team, what time — and I’ll happily watch socialize while I work my way through the spread of finger foods.

And so, in the spirit of basketball, I bring to you – Buffalo Chicken on a Stick! Because who doesn’t love food on a stick? And buffalo chicken. Honestly!? It’s about as American as it gets, y’all.

Buffalo Chicken on a Stick with Blue Cheese Dip

Ingredients

For the chicken:

  • 2 pounds boneless skinless chicken breast, cut into 20 strips
  • 3/4 cup buffalo sauce divided
  • 20 wooden skewers

For the sauce:

  • 1 cup light sour cream
  • 1/2 cup blue cheese crumbles
  • 1/4 cup chopped fresh mint plus more for garnish
  • 2 garlic cloves minced
  • salt and freshly ground black pepper to taste

Instructions

  1. Preheat the broiler to high and place oven rack about 4 inches below the coils. Soak the wooden skewers in warm water for at least 10 minutes (do not skip this step or the skewers will char). Line a large, rimmed baking sheet with tin foil and spray with cooking spray.
  2. Marinate the chicken strips in 1/2 cup buffalo sauce for at least 10 minutes.
  3. Meanwhile, in a medium bowl, combine sour cream, blue cheese, 1/4 cup chopped mint, and garlic to make the sauce. Season with salt and black pepper to taste.
  4. Thread the chicken strips onto skewers and arrange on baking sheet. Broil until the chicken is cooked through, about 8 minutes, flipping once halfway through.
  5. Transfer chicken to a serving dish and drizzle with remaining 1/4 cup buffalo sauce. Sprinkle with chopped mint leaves to garnish. Serve with blue cheese dip.
