I’m eating my third slice of Skinny Peanut Butter and Blackberry Bread as I write this. Which, ya know, may be too much, but it is skinny after all.




And that’s just the first thing to love about this bread. It’s skinny and it’s tasty and I wanna talk a little more about both of those.

Let’s chat skinny first. Actually, before we begin with that topic, let’s address the elephant in the room. That elephant being my PB&J combo. You cannot mess up a PB&J, am I right? And I have a deep/major/BIG liking for those flavors. I wanted this version of the classic PB&J combo to be a bit more sophisticated, so I went with whole berries instead of sugary jam and my Skinny Peanut Butter and Blackberry Bread has me vibing. I’m patting myself on the back this very moment.



Okay, so now let’s chat skinny. I’ve loaded this loaf down with plenty of whole grains, zero butter, and very few sugars. Skinny Peanut Butter and Blackberry Bread is made with SPLENDA® Naturals Sugar & Stevia Blend, which is a 1:1 substitute for regular sugar (i.e. SUPER easy to use in the kitchen). It’s a 50/50 blend of granulated sugar and Stevia, which means it’s also 50 percent fewer calories than just plain sugar. And I can get down with that!

I also filled my bread with whole grains, which means fiber. And protein!

Now let’s talk about the tasty. Skinny Peanut Butter and Blackberry Bread is just that. It’s hearty and grainy. You get the crunchy bits from the seeds and you get some chewiness from the oats. There’s just a light touch of peanut butter in every bite mixed with juicy, bursting berries. A slice will fill you up and keep you satisfied through the morning or it will keep you fueled in the afternoon without weighing you down.

Now if all of the above (the skinny and the tasty) isn’t enough to get you celebrating, you and I maybe just aren’t compatible. ‘Cause I’m over here doin’ my happy dance and cutting myself slice number four.

Skinny Peanut Butter and Blackberry Bread

Skinny Peanut Butter and Blackberry Bread is a sophisticated take on the classic PB&J. This easy recipe is made with SPLENDA® Naturals Sugar & Stevia Blend, is filled with whole grains, and contains zero butter. It's going to keep you fueled for hours and you're gonna love it!

Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup natural peanut butter no added sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup SPLENDA® Naturals Sugar & Stevia Blend
  • 3/4 cup rolled oats
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups blackberries cut in half

Instructions

  1. Preheat oven to 350 degrees F. Coat a 9x5-inch loaf pan with cooking spray and set aside.
  2. In a large bowl, whisk together applesauce, peanut butter, eggs, and vanilla until well-combined. Add SPLENDA® Naturals and mix well.

  3. In a small bowl, mix oats, pumpkin seeds, and sunflower seeds. Set aside 2-3 tablespoons of this mixture for sprinkling on top of the loaf.
  4. Add the remaining oat mixture and the rest of the dry ingredients to the large bowl and stir until well-combined. Gently fold in berries. Pour batter into prepared pan and sprinkle top with reserved oat mixture. Bake 1 hour or until toothpick inserted into the center comes out clean.
