I received free samples of SPLENDA® Naturals Sugar & Stevia Blend mentioned in this post. By posting this recipe for Skinny Peanut Butter and Blackberry Loaf, I am entering a recipe contest sponsored by SPLENDA® Sweeteners and am eligible to win prizes associated with the contest. I was not compensated for my time.

I’m eating my third slice of Skinny Peanut Butter and Blackberry Bread as I write this. Which, ya know, may be too much, but it is skinny after all.

Paleo Southern Biscuits are light and fluffy with soft undertones of butter and subtle hints of coconut. This recipe uses almond flour and coconut flour, making them a grain-free alternative to buttermilk biscuits. Eat them warm with a pat of butter, a drizzle of honey, or topped with a runny egg!

I haven’t gotten personal with you friends in a while. I used to talk regularly about my social calendar, who I was dating, and my deepest thoughts on life. I used to discuss what movie kicked butt lately, what workout kicked my butt, and whose butt I was gonna kick for double-crossing me. Sometimes I even forgot to talk about the food!

Irish Apple Crumb Cake with Honey Whipped Cream

Once again, I’m scrambling to get posts written on time. Thankfully, I find the writing to be the easy, fun part of food blogging. Second only to the eating, of course. There was a boy crisis last night (for once, not my boy crisis) that called for wine and pizza and more wine. It may or may not have been a situation where there was drinking from whole bottles (classy women!), but I can’t confirm or deny this. And the night may or may not have ended with polishing off the last bits of Irish Apple Crumb Cake with Honey Whipped Cream.

I MADE FOOD! I. Made. Food. And it feels so good. Like, imagine all the feel-good feels, multiply by 198, double it, then make Matcha Ginger Oat Muffins and you’ll know what I’m talkin’ about.

The Every Kitchen hasn’t just been on hiatus. I have been on hiatus from my kitchen. Restauranting is fun friends, especially when we’re talking Chicago restauranting, but I like a home cooked something or other every once in a while. Salads don’t count. Neither does microwaving a Dr. Praeger’s veggie patty. Nor does taking a pint of ice cream out of the freezer, letting it get all melty, and then spoon-slurping it up. Nope. Does. Not. Count.
