When this whole stay-at-home thing went into effect, my initial thought was, I’m going to have so much time. I’m going to cook and bake and blog about it. I’m going to post twice per week. The Every Kitchen is going to take off. My side hustle will be in full swing again.


I’m also going to teach myself Spanish.

It has now been seven —seven— weeks and here is my first post and English is my first and still pretty much my only language.

The reality is that I still have my job (one of the lucky few in hospitality) and it’s possible that it’s even busier than before. It’s hard to make comparisons because my day-to-day is so different than it was two months ago. I am saving myself a commute, about 45 minutes a day, but I use that 45 minutes to get in some exercise since I am mostly sedentary now.

I am actually cooking about 90 percent more. But my meals mostly consist of throwing simple things together in a highly unphotogenic way that may or may not taste super good, but will give me sustenance nonetheless. For example: frozen berries + greek yogurt + fiber cereal = breakfast / pretzel crisps dipped in mashed avocado + greek yogurt + salsa = lunch / roasted apples and brussels sprouts + sauerkraut + rotisserie chicken = dinner.

From time to time, I get my grocery list organized and go to the grocery store with purpose. And when that happens, I get to eat things like Lemon Feta Chicken Sliders and you get the recipe.

Believe it or not, we have had a warm day or two in Chicago. My neighbors lit up the grill twice now and you can smell charcoal and barbecues if you go for an evening walk. Is that truly a wonderful smell or do we love it because it signals that summer is here? Or is it nostalgia? It reminds me of warm evenings riding bikes around the neighborhood, racing to get home in time for dinner.

They may look fancy–and they certainly do taste fancy–but all they require is one mixing bowl and a willingness to get your hands dirty. I like that they are light in flavor and small in size. Lemon, fresh basil and oregano brighten them up and feta imparts a creamy tang. Eat two or three and you’ll feel satisfied, not stuffed.

I topped my sliders with classic lettuce, tomato and Dijon mustard, but you could get creative with sun-dried tomatoes, horseradish aioli, or sauteed red onion. Toasted olive oil-brushed buns would be next-level too.

Lemon Feta Chicken Sliders

Ingredients

  • 1 pound lean ground chicken
  • 1/4 cup crumbled feta cheese
  • zest and juice of 1 lemon
  • 3 tbsp chopped fresh basil
  • 3 tbsp chopped fresh oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 10 slider buns
  • lettuce, tomato, red onion if desired

Instructions

  1. In a large bowl, combine ground chicken, feta cheese, lemon zest and lemon juice, basil, oregano, salt, and pepper. Mix until evenly distributed. Hand form into 2-ounce patties.

  2. Prepare grill or griddle with cooking spray and cook burgers over medium-low heat to an internal temperature of 165 degrees F, about 4 minutes per side. Place each patty on a slider bun and top with lettuce, tomato, and red onion as desired.
