Paleo Southern Biscuits + Life Things


Paleo Southern Biscuits are light and fluffy with soft undertones of butter and subtle hints of coconut. This recipe uses almond flour and coconut flour, making them a grain-free alternative to buttermilk biscuits. Eat them warm with a pat of butter, a drizzle of honey, or topped with a runny egg!

I haven’t gotten personal with you friends in a while. I used to talk regularly about my social calendar, who I was dating, and my deepest thoughts on life. I used to discuss what movie kicked butt lately, what workout kicked my butt, and whose butt I was gonna kick for double-crossing me. Sometimes I even forgot to talk about the food!


I sort of miss that part of the blog. I love when my favorite bloggers give us a glimpse of their lives. It brings us closer and makes it feel like they’re my friends IRL instead of just one in a million over this huge virtual network.

So I’m getting personal with you today! This news is about six months late, but I’ve never formally or definitively chatted on the blog about my leap into freelancing.

[First, since I’m getting personal, here are some pet photos from my collection. These two love to hang about in the alley and observe my food photography. In return, they sometimes let me nab a photo!]

I’ll start from the beginning, with a shoutout to The Boy. (Shhh don’t tell him because he would be overly pleased if he found out he had something to do with this!) But wayyy back on our first date in August of last year, in the context of jobs and careers and passions, he asked me, “If you could do anything, what would you do?” And I said, “I have a food blog and I would blog full time.”

Three months later, I was still thinking about that conversation and how those words slipped out of my mouth so effortlessly and without hesitation. What am I waiting for? There will never be a better time. And so, in early November, I put in my resignation and counted down the days until December 31st, when I would officially start working for myself!

Long story short, I ended up being asked to stay three days per week at my previous job, which has been such a blessing. My mind is at ease when I know I’m getting a paycheck like clockwork and retaining my healthcare benefits. Then, between two and four days per week, I blog and also freelance. I’m ghost-writing a cookbook. I’m contributing to online and print publications. I’ve been recruited for food photography, recipe development, and even a podcast (I had to turn down the podcast… I am not Superwoman, despite my best efforts!). And I have been contributing to other blogs, like Healy Eats Real.

Sometimes I wonder if The Boy regrets asking me that question nine months ago, but I do believe him when he tells me he’s proud of me. I’m proud of me too.
