Get ready for the SUPERBOWWWWLLLLLL!

You have two weeks to decide what food you’re putting on your table, which means I have two weeks to actually make and test and eat all that food for you. I sacrifice for you friends, every day. Do you know how difficult that is?


Except… it’s really not hard at all. Not hard at all when you’re eating Bacon Cheeseburger Bombs and the Fudgiest Brownies EVER and THESE, friends — Bacon, Scallop, Pineapple Bites.

The Panthers are gonna win, but YOU are also gonna win. Because these.

These are the easiest, fanciest, prettiest, most colorfullest and flavorfullest of all Superbowl Snacks. Tangy and crispy, tender, salty, and juicy. Forget buffalo chicken dip (SO 2015) and definitely forget Velveeta sausage dip (SO 1995).

The Panthers will bring their A game, so you better bring yours too!

Bacon, Scallop, Pineapple Bites

Ingredients

  • 1/2 fresh pineapple cut into 24 1-inch cubes
  • 1 lime zested and juiced
  • salt and ground black pepper to taste
  • 3 scallions cut into 24 1-inch pieces
  • 4 slices bacon cut into 24 pieces
  • 12 scallops halved

Instructions

  1. Preheat oven to 400 degrees F. Soak 24 wooden toothpicks in warm water. Lightly coat a large, rimmed baking sheet with cooking spray.
  2. In a medium bowl, toss pineapple with lime zest and lime juice, salt, and pepper.
  3. Skewer each toothpick with scallion, bacon, scallop, and pineapple and stand up on the baking sheet. Bake about 12 minutes until the scallops and bacon are cooked through.
