Ekkk. I know. This is very bittersweet for me. So many mixed feelings.

Let’s talk about the salad first, mmmkay?


I kind of wanted to call this Spring Bikini Salad because that’s mah goal. Beach volleyball will be here before we know it. And even if we don’t actually play, we wanna look good in our short shorts sipping on beachtinis. Am I right?

However. I stuck with Superfood Salad because that’s actually what this is. I recently divulged my newfound stress-eating habit. I thought about all those stressful days and I purposefully marched to the supermarket to seek out superfoods – antioxidants, fiber, omega-3’s, vitamins, minerals – all that stuff that’s gonna make the skin glow and the hair grow and the hips shrink.

And I love what I came up with. This salad requires one knife, one cutting board, one bowl. The only chopping is with the avocado, slice up the lemon if you wish. Toss it all in one bowl, sprinkle with some olive oil and white wine vinegar and… you’re DONE! Ta da. Voila. Little hip shake-a-roo and a pat on the back.

The flavors are fresh, they pop – fruity and springy – and eating a whole bowl feels like I just added a year to my life and took a pound off my body.


Now about the hiatus. Quickly, so I don’t get too deep. You friends know how deep I like to get, given the chance. 🙂

I love my blog. My ultimate, ideal, best situation I can dream up is having the opportunity to take the blog full-time, work from home, put all my resources and creative energy into this vibrant, living, evolving thing I love so much.

But I feel like I’ve hit a plateau. I’m struggling with some of my new limitations – time, being the biggest. But also, content. I know some part of the blog needs a change or update or upgrade or something. But I don’t know what exactly it is. And I think if I take a step back, I might be able to figure it out.

A fellow Chicago blogger friend put it this way: You’ll discover what it is that you miss. You might really miss taking photos or making food or talking about your life. Read a ton of blogs and maybe you’ll discover that you’re drawn to fashion (doubtful), or career, or lifestyle sites. Maybe you won’t miss anything at all (also doubtful). But you’ll have an aha! moment or some discovery and when you come back, you’ll bring a fresh view, voice, idea…

So that’s where I am.

To stay sane while I’m away, I’ll have to start keeping a personal journal and you, friends, are going to have to go elsewhere for your gossip.

But only for a couple of months and then we’ll reunite with bear hugs and kisses and tears of joy, and sighs of relief and we’ll catch up on all the really silly/idiotic/clumsy things I’ve done and all the (ex)romantical happenings in my life and everything about YOU too! 5-Minute Spring Superfood Salad

Get bikini ready or beach volleyball ready or just "my best self" ready in less than 5 minutes with this Spring Superfood Salad.

Ingredients

Buy these:

  • container of spinach & arugula mix
  • frozen blueberries
  • pomegranate seeds
  • ripe avocado
  • whole walnuts
  • lemon
  • olive oil
  • white wine vinegar

Instructions

  1. Toss into a bowl: 3 handfuls of spinach & arugula mix. 1/4 cup blueberries, 2 tablespoons pomegranate seeds, 1/3 ripe avocado, 2 tablespoons walnuts.
  2. To dress: squeeze 1/4 of the lemon over the salad and sprinkle with 1/2 teaspoon olive oil and 1/2 teaspoon white wine vinegar (or more to taste).
