Forgive me, for I have too many pictures and too few words.

This is the first food I photographed with my *new* camera lens.


It was <3 <3 <3 at first click. Let’s just take a second to look at this beautiful asparagus and how clear and clean the little tender tops are with such a perfect fade into the distance. That, friends, is my new Nikon 35mm f/1.8 lens.

And then there was fun sunlight in Mom’s kitchen. I never get sunlight in my kitchen. So then there were these amazingly fun and dramatic asparagus pictures:

I actually made these Ham & Cheese Asparagus Spears for Mom. She and Dad went to play cards with some other couples and she requested that I make a “healthyish appetizer that actually tastes good please, none of your weird health nut stuff you’re into, I want people to like it.” Whatever THAT means. I mean, really, have you guys seen any weird “health nut” recipes on this website?

That’s cause all the chia seeds are IN MY BELLY. Just kidding. I did actually try getting on board with that trend. I was going to give you guys a chia pudding recipe even, I tried twice(!), but honestly, I couldn’t stomach them. I’m going to only stick with the best foods! And in this healthy case, it’s fresh asparagi (is that the plural form?), light cheese, and deli ham.

Honestly, I wanted to eat all of these cute little asparagus presents. Cause that’s what they are — little gifts of asparagus wrapped up in toppings. They are little, guilt-free, ham and cheesy presents to our hungry selves.

Cheeeeeeeeese. Yummyyyyyy. (See above: that gooey, melty cheese, mmmmm…)

It was hard for me to set aside enough to send to that card game because they were just so fun to eat, but I had Mom hawk eyes watching me. But I managed to fill up the platter, which came back empty at the end of the night, leaving me both disappointed and thrilled. Disappointed because IIII wanted the leftovers! Thrilled because there weren’t any and those crazy card-playing party-goers just went wild for some asparagus! And that’s what we call asparagus love.

Ham & Cheese Asparagus Spears

Course Appetizer
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
Servings 40 spears

Ingredients

  • 40 asparagus spears
  • 20 slices Ultra Thin Sliced Mild Cheddar Cheese 1 package, cut in half
  • 20 slices deli ham cut in half

Instructions

  1. In batches, steam the asparagus until bright green and still crisp, about 3-5 minutes. Let cool.
  2. Preheat the oven to 425 degrees F.
  3. Layer a half slice of ham, topped with a half slice of cheese. Place one asparagus spear on top of the cheese and roll the ham and cheese around it. Place crease side down on a large baking sheet. Repeat until all the asparagus are wrapped.
  4. Bake 5-10 minutes until cheese is melted and asparagus are tender.
