The gooey, juicy, cheesy Classic Pastrami Reuben is deceptively quick and easy to make. It’s basically a grilled cheese plus a few extra flavor-filled toppings. Perfect for St. Patrick’s Day, or course, and also perfect on any other day of the year.

Spiced Pork Posole

February 25, 2015 by theeverykitchen@gmail.com 2 Comments

My pipes froze over the weekend. But thankfully I had a batch of this Spiced Pork Posole ready to zap in the microwave.

It may not have been enough to thaw the pipes, but it unfroze my soul.

Just kidding. My soul is pretty warm-fuzzy.

An FYI about frozen pipes — they are not fun. I returned from work one day, got undressed for a post-work rinse, which takes a lot of courage since my house is not exactly winterized (single-pane windows, thermostat set to 65…). I turn on the bathtub faucet only to be met with a quick spit of water, a few gurgly sounds, and then a puff of dust. (There probably wasn’t dust — I might have conjured that bit in my imagination.)

Chilled Mango Red Curry Soup with Shrimp

Leave it to me to make a chilled soup in the middle of winter.

I just got an idea and ran with it and, little did I know, when my idea came to fruition, it would taste better as a cool summery soup than as a warm wintery one. Sometimes these things happen. Whatcha gonna do? (Shrugs shoulders.)

I went to one of my favorite local restaurants last weekend and ate a bowl of mussels in a red coconut curry sauce. And ya know what? It ruined me+mussels for the rest of my life, unless said mussels happen to be hanging out in a swimming pool of delightfully creamy and smoky red coconut curry sauce. In which case, they are goners.

Kale Caesar with Chipotle Mushrooms and a Runny Egg

It’s 2:43 am. I can’t sleep.

Which is so frustrating.

I was tired when I went to bed last night! And I’m tired now!

Maybe it was the four (large) cups of black tea between 4 and 8 pm last night.

Or that I left my favorite pillow in the next town over.

Or that my stomach is growling for the first time since Thanksgiving. (Yes, finally!)

I’m writing this on the drive home from Nashville.

Guuuurrrrls weeeekeennnndd!

It took all my effort to shout that. I am worn out.

It’s been 10 days of travel — two very different trips, but both soooo awesome. I called the BBF nearly every day and talked his ear off. Seriously, the guy is such a good sport.

Fall Kale Salad with Pesto Chicken

Fall Kale Salad with Pesto Chicken

Fall Kale Salad with Pesto Chicken. Recipe at www.mybottomlessboyfriend.com

Mom made pesto and I used that to marinate the chicken, Shout out to her — thaaaaanks Mooooom! 🙂

I just spent four amazing days at the 2014 Food & Nutrition Conference and Expo. I packed one bag and came home with four. My bags are full of education materials and handouts, lots of food samples and kitchen utensils, and a couple of free cookbooks.

And that’s only the stuff I took home. I also ingested a fancy free dinner, a few gratis happy hours, a lot of education sessions, and a freakin’ ton of new food products. I met new friends, made industry contacts, swapped lots of business cards, and came home with some creative ideas for my career.
