Sheet Pan Sage Pork with Apples and Potatoes is a quick and easy weeknight recipe. Serve your whole family or pack the leftovers for lunch. It’s sugar free and gluten free too, so you can feel good about how you fuel yourself.

I went to bed at 7:50 p.m. last night, so I get it. You want dinner and you want it fast. And that’s where sheet pan meals come in. Hands in the air if you’ve ever tried one! Yep, that’s right. And keep ’em up if you love sheet pan meals. Okay, yeah, totally what I expected. Everyone in *this imaginary room* right now has his hand up.

I received free samples of SPLENDA® Naturals Sugar & Stevia Blend mentioned in this post. By posting this recipe for Skinny Peanut Butter and Blackberry Loaf, I am entering a recipe contest sponsored by SPLENDA® Sweeteners and am eligible to win prizes associated with the contest. I was not compensated for my time.

I’m eating my third slice of Skinny Peanut Butter and Blackberry Bread as I write this. Which, ya know, may be too much, but it is skinny after all.

Salmon Nicoise Salad with Dijon Caper Dressing tastes like a “treat yourself” meal, but it’s gluten free, sugar free, low-carb, paleo-friendly, and deceptively easy to prepare. I developed this recipe for Healy Eats Real, so click here to get the recipe!

I’ve always liked salmon a lot, but currently: for real obsession status.

And I don’t think I’m exaggerating here.

Air Fryer Coconut Shrimp with Piña Colada Dip is a healthy, tropical summer appetizer. Eat four or five of them paired with a side salad for a light meal. Air frying shaves off calories and fat, but you keeps the shrimp brown and crispy.

There is nothing worse in my window unit Chicago apartment than turning on the oven in July. Except, perhaps, turning on the oven in August. Crispy Baked Orange Tofu is a deliciously sweet and spicy, healthy substitution for your favorite Chinese takeout meal. I don’t even notice the reduction in calories, saturated fat, or sodium and you won’t either!

The Every Kitchen’s Food Stories series continues with fellow dietitian and flexitarian, Katie Pfeffer. Katie’s is a story I think many of us can relate to. She grew up as sous chef in her childhood home, creating meat-based meals with her mother. As she got older, both her palate and her knowledge widened and Katie is now the head chef of her flexitarian home kitchen. If you’re not sure what “flexitarian” means, read her food story to find out!
